Yes, absolutely, you can have both black and white and color photography. I recommend that you talk this over with your photographer, describing the desired look of the photographs. This also gives the photographer time to buy the necessary film. It is possible to make black and white prints from a color negative. The range of grays are not as good, but it is acceptable. Ask your photographer in the consultation to show you a sample of color negatives used to print black and white photographs. That way when you are looking at the proofs, you might like to have one printed B/W. Be aware that nowadays, the labs are set up for color processing, and in almost all cases B/W printing is significantly more expensive then color. About 30% more.
