Two hours before sunset is the best time photograph a wedding. Obviously it's not always possible to arrange this time. However, if you plan your wedding far enough in advance, you ought to be able to get the time you want your photographs taken. You can also look up the sunset time for your projected wedding date on the Internet, and make plans accordingly.
